Help with a few things

When I selected y to use an item and a to break an item, I was unable to <esc> back out of the menu. The only choice I had was to actually break an item. I wanted to cycle through some of the choices, but now I'm a bit gun-shy.
Also, how do I interact with things around me using the items in inventory? For instance, lets say I have a webbing adjacent to me, covering a corridor. How do I use my torch to burn the webbing? Can I use inventory items on another item?
